HBM offers two pectin-set clean-label base systems. The sugar base uses tapioca syrup, cane sugar, water, and pectin. The sugar-free base uses FOS (chicory root fiber), allulose, water, and pectin. Both keep the under-2% minor list short: natural flavor, natural color, sodium citrate, citric acid. The sugar version delivers the best taste profile. The sugar-free version adds prebiotic fiber and skips the glycemic load.

Flavor profiling and active loading

Active load runs 10-17% by weight on most SKUs. The theoretical ceiling is 33%, but texture and flavor degrade as load climbs. Bitter actives get layered flavor masking at the bench sample stage. Heat-sensitive actives are flagged early because pectin deposition runs at 95-105°C.
